2. In a medium bowl, combine the flour, oats, and yeast. In a separate bowl, whisk together the water and egg. Add the wet ingredients to the dry ingredients and mix until well combined.
3. Transfer the dough to a lightly floured surface and knead for 5 minutes, or until it is smooth and elastic. Form the dough into a ball and place it in a greased bowl. Cover the bowl with plastic wrap and let the dough rise in a warm place for 1 hour, or until it has doubled in size.
4. Punch down the dough and divide it into 8 equal pieces. Roll each piece of dough into a rope about 12 inches long. Tie the ends of the ropes together to form shanks, then place them on the prepared baking sheet.
5. Brush the shanks with olive oil and bake for 25-30 minutes, or until they are golden brown.
6. Let the shanks cool completely before giving them to your dog. Store the shanks in an airtight container in the refrigerator for up to 3 days.
